Gut-Friendly Teff Pancakes with Hemp & Caramelized Bananas

I'm a HUGE fan of one-bowl meals. Breakfast, snacks, dinner or dessert - I think it's so satisfying to have little groups of healthy ingredients piled separately on top of a healthy green and/or grain base. I love food and love the way it looks when textures, colours and healthy ingredients all play well together right before me.

I like my food like I like my tribe: vibrant, diverse, healthy and with a little sweetness and spice!

Last week I posted a recipe for a Gut-Friendly African Grain Bowl, using teff as the main ingredient. Teff usually comes in a fairly big bag so I wanted to offer an alternative way to use the leftover teff without repeating the breakfast bowl recipe over and over.

Variety in my kitchen is key! Both for avoiding boredom and food intolerances. This leads me to today's recipe: Teff Pancakes. They're rich, nutrient dense, and they hold together like no other gluten-free pancake I've ever made. I hope you guys love them as much as
me and my Dad did! I made them for him last Sunday for Father's Day, as he has celiac disease, and I wanted him to have something comforting and satisfying that didn't crumble apart or leave him feeling unsatisfied.

He ate the whole stack I made for him, it made me so happy :) I love to show my love for others through food. Who doesn't feel special when they receive a tasty home cooked meal as a gift?

Ok, let's get to the good stuff... pancakes!

Gut-Friendly Teff Pancakes with Hemp & Caramelized Bananas

Ingredients

  • 1½ c teff flour (in a spice grinder or high speed blender, grind the whole teff seed into a fine powder)
  • 2½ tsp baking powder
  • 1 tbsp maple syrup
  • ½ tsp sea salt
  • ½ tsp cinnamon
  • 2 eggs
  • 1¼ - 1½ cup buttermilk (add 1 Tbsp lemon juice or vinegar to your non-dairy milk (macadamia, pecan or walnut milk for low FODMAP Phase; any nut milk for Detox Phase of program) to equal this amount of liquid)
  • 6 Tbsp melted coconut oil
  • Caramelized Bananas
  • 3 large bananas
  • 3 Tbsp coconut oil
  • 3 Tbsp maple syrup

Directions:

  1. Mix the ingredients of teff through cinnamon in large bowl.
  2. Combine the remaining ingredients in a separate bowl.
  3. Add the wet ingredients to the dried. Start with the 1¼ cups of the buttermilk; and add the additional ¼ cup if the mixture is too thick.
  4. Put 1 tbsp of coconut oil into cast iron pan on medium heat. Drop 3T or so of the mixture into pan.
  5. Let brown for 2 mins then flip.
  6. Serve with Caramelized Bananas, maple syrup and hemp seeds.

Caramelized Bananas

  1. Split 3 large bananas in half lengthwise.
  2. Heat 3 Tbsp coconut oil in a pan and add the maple syrup.
  3. Cook for 2-3 minutes over medium-high heat.
  4. Flip and cook on other side for 2 minutes.
  5. Serve on top of pancakes. Delish!

This dish is high in protein, fibre, is nutrient dense and uses a low glycemic natural sweetener. It's perfect for those who are suffering from IBS, SIBO, or IBD.
